step by step recipe
- We create our chia egg by placing the chia seeds in the brewed coffee and letting it rest for about 10 minutes until it becomes gelatinous.
- We line an oven dish that fits inside the air fryer basket with parchment paper.
- We place the mixer in the Robotmix jar. We put half of the chocolate chips in the jar and melt them by setting the Robotmix to 50°C at speed 1 for 4 minutes.
- While the chocolate chips are melting, in a separate bowl, we sift together the flour, cocoa powder, salt, and baking powder, and set aside.
- Once the chocolate is melted, we add the vegan butter and brown sugar to the jar. We mix by setting the Robotmix to speed 1 for 1 minute. (Without heat)
- We add the chia mixture and vanilla to the Robotmix jar and mix at speed 1 for 1 minute. We add the flour mixture and mix at speed 1 for 45 seconds. (Do not overmix)
- We remove the mixer and add the rest of the chocolate chips. We gently mix with a spatula. We transfer the batter to the prepared oven dish and place it in the air fryer basket.
- We bake at 160°C for 30 minutes. We let them cool and set for at least 10 minutes before serving.
- Serve piping hot!
