step by step recipe
- If we're going to cook the beans, soak them in plenty of cold water overnight, drain and cook following the package instructions (about 30 minutes in a pressure cooker). Drain all the liquid well and let cool.
- To cook the brown rice, bring twice the volume of water to a boil, add the rice, cover and let simmer for 20 minutes, then drain.
- To cook the sweet potato, cut it in half, place it in the air fryer tray and cook at 180 degrees for 20 minutes until very tender.
- Place all ingredients in the robot's jar and mix at speed 4 for 40 seconds, we'll get a homogeneous, moist but malleable dough. Add breadcrumbs if necessary.
- We have the option of letting the dough cool in the refrigerator for about half an hour to make the burgers easier to form.
- When we're ready to cook them, take portions of the desired size with moistened hands or using gloves, form balls and gently flatten them.
- Preheat the air fryer without oil, place the burgers in the lower trays of the oven and cook at 200°, 8 minutes on each side of the burger. The time will also depend on the thickness and how well-done we like them.
- To assemble the burgers, toast the bread on a griddle or pan and place a base of lettuce or escarole, put the burger on top, one or two slices of cheese, a slice of tomato, red onion cut into julienne strips, and some avocado wedges. Add barbecue or tomato sauce if desired, give a dash of pepper and close with the top part of the bread.
