Ingredients
- task_alt1,5 l. of fresh goat milk
- task_altJuice of 1 lemon
- task_alt30 ml. of apple cider vinegar
- task_altPink peppercorns (optional)
- task_altBrine:
- task_alt1 l. of water
- task_alt40 g. of salt
step by step recipe
- First, add the milk to the cooker. With the lid open, set the Slow Cook Menu, 90°C, for 2 minutes. Ensure it doesn't come to a boil.
- Once the program is finished, add the lemon juice and vinegar. Stir with a wooden spoon and let it cool for approximately 1 to 2 hours. We'll see that the milk has curdled and the whey separates.
- Once cooled, place the cheesecloth in a colander and strain the milk. Discard the whey and keep the solid part. Close the cheesecloth and squeeze out as much liquid as possible.
- Place the cheese in a bowl along with the slightly crushed peppercorns. Mix with the wooden spoon.
- Put the cheese back into the cheesecloth and drain again. Shape it as desired and place it in the colander.
- Place the cheese in the refrigerator for 24 hours with a weight on top (a plate, for example) to drain as much whey as possible.
- The next day, prepare the brine to preserve the cheese in perfect condition. Heat some of the water and dissolve the salt. Add this mixture to a bowl with the rest of the water and place the cheese in it. Store it in the refrigerator until ready to consume and enjoy!
Ingredients
- You can use your favorite spices and herbs to prepare a cheese to your liking.
- With the brine, it keeps perfectly in the refrigerator for 1 week.
- Salt is not used in the cheese preparation as it will gradually salt through the brine.
- Accessories used: wooden spoon and cheesecloth
