- task_alt80 g. of shredded coconut
- task_alt40 g. of coconut sugar or your preferred sugar
- task_alt50 ml. of coconut milk
- task_alt50 ml. of mild extra virgin olive oil

step by step recipe
- Add the liquid ingredients to a bowl and whisk using a hand whisk. Then, incorporate the dry ingredients and mix with a spatula until combined.
- Place the dough between two sheets of parchment paper and roll it out until thin using a rolling pin.
- Cut them into the shape you prefer. We can use a cookie cutter or a glass if we don't have one. Place them in the air fryer basket.
- Manually set the air fryer to 180 degrees Celsius (356°F) for 10 minutes. When 3 minutes are left, open the basket and flip the cookies. Close and let them finish browning. Check every 3-4 minutes if they're golden brown because depending on their thickness, they'll be done sooner or later.
- Let them cool on a wire rack and enjoy!
Ingredients
- If you like very crispy cookies, make them thinner. If you prefer them softer, make them a bit thicker. Depending on the thickness, you'll need to adjust the baking time by a few minutes more or less.
- You can serve them with a little chocolate drizzled on top. They're delicious!
- To make the sugar-free version, use erythritol as a sweetener.
