Ingredients

- task_alt150 g. honey
- task_alt75 g. of chocolate chips (optional)
- task_alt2 g. cinnamon
- task_alt4 g. of baking powder
- task_alt4 g. of baking soda
- task_alt4 g. of salt
- task_alt5 ml. vanilla
- task_alt1 banana (mashed)
- task_alt2 eggs
- task_alt1 zucchini
step by step recipe
- We place the food processor shaft in the jar and put the grating disc on top. We put the processor lid in place.
- We melt the butter in a separate bowl and set it aside to cool. We cut the ends of the zucchini and cut it in half lengthwise so it fits through the lid opening.
- We grate the zucchini by setting the speed to 5 and carefully inserting the zucchini through the lid opening. We remove the zucchini and clean the jar. We change the grating disc for the mixer.
- With a paper towel, we squeeze out the excess water from the zucchini strips and set aside. We add the mashed banana, melted butter, honey, vanilla, and eggs to the jar and mix by setting the speed to 4 for 5 seconds.
- We add the cinnamon, salt, baking powder, and baking soda to the jar and mix them by setting the robot to speed 4 for 5 seconds. We add the flour, half at a time, and mix at speed 3 for 20 seconds, stopping to clean the sides of the jar after each addition.
- We add the zucchini and chocolate chips (if using) and mix by setting the speed to 2 for 10 seconds. We pour the batter into cupcake molds lined with paper or sprayed with non-stick cooking spray.
- We place the molds in the air fryer basket and bake at 180°C for 10-12 minutes, or until a toothpick inserted in the center comes out clean.
- Enjoy for a healthy breakfast or snack!
