step by step recipe
- First, we season the monkfish and slice the leek. Set aside.
- We add 25 ml of oil to the bowl and set the GRILL menu, cooking temperature 2, for 10 minutes. Once hot, we cook the monkfish on both sides. If we have extra time, we cancel the program and remove it.
- Once the fish is removed, we add 25 ml of oil and set the FRY menu, cooking temperature 1, for 5 minutes. Once hot, we add the leek and season. We stir occasionally with the spatula until the program ends. Remove and reserve.
- Next, we prepare the sauce. For this, we set the GRILL menu, cooking temperature 1, for 3 minutes and melt the butter. We remove it from the pot and let it cool in a bowl. We wash the pot and put 500 ml of water inside. We set the STEAM menu, cooking temperature 1, for 5 minutes. We place a glass bowl inside and add the egg yolks. We beat with the help of a whisk. Then, we slowly add the melted butter and continue beating. Once incorporated, we add the lemon juice, vinegar, salt, and pepper to taste. We keep beating until it thickens a bit. If we have time to spare, we cancel the program.
- We serve the monkfish on a base of Hollandaise sauce and add some leek and a strip of zucchini (raw or grilled) on top. Enjoy!
