Ingredients
- task_alt 1 cup of milk
- task_alt1 cup of water
- task_alt500 g. of cassava starch. (In Spain it's difficult to find, but the Yoki starch brand sells it; it's possible to find it in some stores or on Amazon.)
- task_alt1 cup of sunflower oil
- task_alt4 eggs
- task_alt400 g. Parmesan cheese
- task_altSalt
step by step recipe
- We use a saucepan to boil the milk with the oil and water.
- When the liquid is boiling, we turn off the heat and mix it well with the cassava starch until it's incorporated, then let it cool (because if we mix it hot with the eggs, they will cook when mixing).
- Once we have the cold dough, we're going to mix it with the eggs. To do this, in a small bowl, we break one egg at a time and add it to the dough; if one breaks, we don't lose the whole recipe.
- With each addition, we mix vigorously with a wooden spoon to fully incorporate each egg. The dough won't be smooth, that's normal! The texture is a bit more rustic, with lumps of cassava starch, and a bit sticky too. The important thing is that all ingredients are well mixed, without the egg separating from the dough.
- And finally, we add the cheese.
- With the resulting paste, we make small balls.
- Preheat the air fryer.
- We place as many balls as we can fit in the air fryer basket without them touching each other.
- We cook for approximately 15 minutes at 170 degrees. Enjoy!
