Ingredients

  • task_alt200 g. of desalted cod (skinless and boneless) in pieces
  • task_alt100 g. of mild extra virgin olive oil
  • task_alt35 g. of milk
  • task_alt2 mangoes
  • task_alt1 peeled garlic clove
  • task_altPepper
  • task_altSun-dried tomatoes in olive oil (for decoration)
  • task_altSesame seeds (for decoration)

step by step recipe

  1. Place the blades in the jug.
  2. Add the garlic to the blender jar. Place the lid on and set to speed 5 for 8 seconds. Open the lid and use the spatula to scrape down any garlic pieces that may have stuck to the sides.
  3. Add the oil and place the lid on. Set to 120°C, speed 1 reverse rotation, for 5 minutes. When the program finishes, transfer to a heat-resistant container and set aside.
  4. Without washing the jar, add the cod, milk, and pepper. Cover and set to 120°C, speed 1, for 6 minutes. When the program finishes, remove the jar from the base, open the lid, and let it cool for 10 minutes.
  5. Place the jar back on the robot, put the lid on, and set to progressive speed 7-12 for 30 seconds. Use the spatula to scrape down anything that may have stuck to the sides.
  6. Place the lid on and leave the steam vent open. Set to speed 5 for 1 minute and slowly pour in the oil that we had set aside with the garlic. Let it cool and refrigerate to allow it to solidify slightly for easier handling.
  7. Peel the mangoes and cut them into thin slices.
  8. On a sushi mat or on the countertop, place strips of mango next to each other, slightly overlapping. Spread the cod brandade on top and carefully roll, leaving the seam side down.
  9. Garnish with chopped sun-dried tomatoes, sesame seeds, and a drizzle of oil. Refrigerate until ready to consume and enjoy!

Ingredients

  • Accessories used: blades and spatula
  • For a more economical option, we can buy salted cod. To desalinate it, soak the salted cod in plenty of cold water for at least 24 hours and change the water at least 3 or 4 times.
  • Cod crumbs can also be used.
