- Add the salt, place the basket in its position inside the jar and put the peeled and cut potatoes inside. Cook for 20 minutes, temperature 120 degrees, speed 1.
- When the time is up, remove the basket with the help of the spatula and discard the cooking water.
- Pour the boiled potatoes, cream, oil, a pinch of salt and pepper into the empty jug and emulsify for 3 minutes, 70ºC, speed 4. The potatoes are ready.
- Pour into a piping bag to make it easier to serve in bowls or cups. We wash the jar before continuing.
- To prepare the paprika oil: put the oil in the jug and heat for 1 minute, 100ºC, speed 1.
- Add the sweet and hot paprika and salt and mix for 10 seconds on speed 3. Ready
- In a shot glass, first pour the potato emulsion, place a slice of octopus and cover with the paprika oil. If we want to give it a Galician touch, we put some Maldon salt flakes on top. You will lick your fingers.
- It can be served hot or made in advance and heated in the microwave. It is not as tasty cold.
