step by step recipe
- Fill the jar with 1.5L of water and place the steam basket on top. Place the cauliflower in a single layer in the basket and cover with the lid. Steam the cauliflower by setting the temperature to 100°C for 15 minutes (make sure to start the cooking time when the temperature has reached 100°C).
- Once cooked, remove the cauliflower to a separate bowl and set aside. Discard the water from the jar and clean it. Place the blades in the jar and add the garlic. Chop the garlic by setting the speed to 6 for 5 seconds.
- Next, add the steamed cauliflower to the jar and chop it by setting the Robotmix to speed 4 for 5 seconds. Remove the mixture to a separate bowl and set aside. Clean the jar and replace the blades with the processor shaft with the grating disc.
- Place the food processor lid and grate the potatoes by inserting them into the lid opening and setting the robot to speed 5. Continue adding potatoes with the pusher until they are all grated.
- In a separate bowl, mix 60 g. of water with the chia seeds and let it rest for 5 minutes to create a viscous substance. Next, drain the excess water released by the potatoes by pouring them into the steam basket over the sink. Clean the jar and install the mixer.
- Put the garlic, cauliflower, and potatoes back into the robot jar and add the chia mixture along with the basil, flour, and salt. Mix everything by setting the speed to 3 for 2 minutes.
- Roll the dough into croquette shapes with your hands and coat each one with panko to cover the entire surface. Place the breaded croquettes on parchment paper and spray all sides with oil.
- Place the croquettes in the air fryer basket and cook them at 195°C for 18 minutes, turning them halfway through.
- Enjoy them hot and serve with ketchup, barbecue sauce, or your favorite dipping sauce!
Ingredients
- Accessories used: steam basket with steam lid, blades, food processor shaft with grating disc, mixer.
- The dough may be a bit moist after mixing everything, but squeezing each croquette in your hands should release any excess.
