step by step recipe
- Both raw and canned beans can be used. If we choose the raw ones, we will soak them overnight for cooking the next day.
- Put the pork spine pieces, the ear, the pig's foot along with the peeled and chopped turnip in the pot.
- Add water, a pinch of salt and let it cook for 20-25 minutes, soup menu, closed valve. Depressurize and open the cooker.
- Then add the beans, the sausages and let it all boil for 5 more minutes, fry menu, without covering the cooker.
- In a separate pan, sauté the garlic with the sweet paprika and pour it into the pot.
- At this point, taste the broth to check if it has enough salt, add more if necessary.
- Finally, add the rice and the food coloring and set the cooker menu, closed valve, for 5 minutes. It should be creamy, so if we see that it's going to be short on water, we can add more water without problems before adding the rice (approximately three cups of water are needed for one cup of rice).
- Once the program is finished, depressurize the cooker and serve immediately.
