step by step recipe
- To make the sauce, set the multi-cooker to Soup menu T3 for 2 minutes, leaving the lid open. Let it reach temperature and add the cream, bringing it to a boil. Remove the cream to a separate bowl and add the dried mushrooms. Cover and let rest for at least 30 minutes.
- Cut off both ends of the green beans, leaving the edible center. Clean the pot and add water to fill approximately half of it. Set the multi-cooker to Soup menu T3 for 15 minutes and let the water come to a boil. Add the beans and let them boil for 3 minutes before removing them to an ice bath. This will seal in the color and freshness. Set the beans aside for now. Discard the water from the pot. After 30 minutes, blend the cream mixture with a blender or immersion blender until smooth. (There may be some small pieces left, but we get it as smooth as possible). Set aside.
- Set the multi-cooker to Fry menu T1 for 5 minutes and let it heat up. Add the butter and melt it in the pot. Then add the flour and whisk the mixture constantly for 2 minutes with a plastic whisk. Next, add the white wine to the pot and stir constantly for 1 more minute. Add the mushroom and cream mixture and mix well. Bring to a low simmer for about 2 minutes. Remove from heat and add the desired amount of salt and pepper as well as the pinch of nutmeg.
- Clean the pot and place the green beans in it. Pour the sauce over the beans, making sure to cover them well. Sprinkle the fried onions on top and set the multi-cooker to Oven menu T1 for 20 minutes.
- Serve piping hot!
