step by step recipe
- First, we remove the spine from the monkfish tail and cut the fish loins into cubes. We reserve.
- We peel the prawns and set aside the body and heads separately.
- We chop the onion, pepper, and garlic cloves, all finely diced.
- We add the oil to the cooker and set the FRY menu, 160 ºC, 10 minutes. When it's hot, we add the vegetables from the previous step. Season with salt and pepper and stir from time to time.
- After 3 minutes, we add the monkfish spine and prawn heads. Stir from time to time.
- Once the program is finished, we add the rest of the ingredients to the cooker, except for the prawn bodies. We cover, close the valve, and set the PRESSURE menu, high pressure, 120 ºC, 20 minutes.
- At the end of the program, remove the air by turning the valve. We open and remove the monkfish spine and prawn heads.
- We add the prawn bodies and put the lid on. We let them cook for a few minutes with the residual heat. Enjoy!
