step by step recipe

  1. The day before we put 150 grams of buckwheat to soak in water and leave it overnight.
  2. The next day we rinse, drain and reserve.
  3. Peel the onion and garlic, chop for 5 seconds, speed 5. We lower the small pieces towards the blades.
  4. Pour the oil and poach for 10 minutes, temperature 120ºC, speed 1.
  5. Meanwhile, clean the mushrooms and cut them into 4 or 6 pieces.
  6. At the end of the time, add the mushrooms and cook for 5 minutes, 100ºC, speed 1, reverse rotation.
  7. Then add the buckwheat and walnuts. Season with salt and pepper and mix for 1 minute, temperature 100ºC, speed 1, reverse rotation.
  8. Pour in the broth and continue cooking for 5 minutes, temperature 100ºC, speed 1, reverse rotation.
  9. At the end of the time, check that all the water has evaporated and that the buckwheat is tender.
  10. Divide among plates and sprinkle with sesame seeds, nutritional yeast or a few pieces of walnuts.

Ingredients

  • We can change the onion for leek or even leek and celery.
  • The nuts can be substituted for any other dried fruit. Hazelnuts also go very well with this recipe. We can also try roasted chestnuts to enhance the autumn flavor.
  • The sesame seeds and walnuts serve to add some crunch to the dish. If we don't want to or don't have it at home, that's fine.
