Ingredients
- task_alt1 medium sweet potato (approx. 200 g.)
- task_alt1 tsp. vanilla
- task_alt140 g. maple syrup
- task_alt40 g. peanut butter
- task_alt75 g. of powdered dates
- task_alt100 ml. of almond milk
- task_alt100 g. of oatmeal
- task_alt2 tsp. of baking powder
- task_alt½ tsp. of salt
- task_alt50 g. chocolate chips
step by step recipe
- Wash the sweet potatoes and put them in the bowl of the food processor, close the lid and set the oven menu, temperature 3, 50-60 minutes. (Or until the sweet potatoes are soft). Once finished, remove and set aside until cool.
- Clean the robot pan and prepare it for the muffins by placing the baking rack in it. Once the sweet potatoes are cold, remove the skins and puree them with a blender.
- Add the vanilla, maple syrup, powdered peanut butter and almond milk to the mixer and blend until smooth.
- In a separate bowl add the oat flour, baking powder, cocoa powder and salt and whisk to mix. Next, add the wet ingredients to the dry mixture and beat until blended. Add about 3/4 of the chocolate chips, reserving some to sprinkle on top of the muffins, and mix with a spatula.
- We prepare our baking pans by placing paper molds and distribute the dough evenly among the 12 molds.
- Add the extra chocolate chips on top of the muffins and bake the muffins in the robot by placing them on the oven rack and closing the lid.
- Set the food processor to the cake menu, temperature 3, 35-40 minutes. Remove the muffins from the robot and let them cool for 5-10 minutes before eating.
