step by step recipe
- Prepare the pre-ferment the night before. Place the blades in the jar and add the milk and yeast. Set to speed 1, 40°C, for 30 seconds. If it hasn't reached the temperature, set it for a few more seconds. Then, add the flour and set the automatic kneading menu for 2 minutes. Remove the dough, form a ball, and place it in a bowl covered with plastic wrap. Let it rest in the refrigerator overnight.
- The next day, prepare the dough. Place the blades and add the milk and yeast. Set to speed 1, 40°C, for 1 minute. If it hasn't reached the temperature, set it for a few more seconds. Then, add the rest of the ingredients except for the butter and set to speed 5 for 20 seconds. Next, add the pre-ferment and set to speed 2 for 40 seconds. Then, add the butter and set the automatic kneading menu for 4 minutes. Open, check that all ingredients are well integrated, cover the bowl with a cloth, and let it rise until it doubles in volume, 1 to 2 hours.
- When it has risen, remove the dough and degas it for a minute to remove the air. Form half of the dough into a ball and place it in the air fryer basket lined with parchment paper. Make a hole in the center with your fingers and place a greased cooking ring in the center. This way we'll achieve the shape of a ring cake. Brush with egg and let it rise again for a few minutes to increase in volume.
- When it has increased in volume, brush it again with egg, add the candied fruit, and moisten some sugar with a few drops of water and sprinkle it over the cake.
- Close and manually set to 160°C for 15 minutes. Let it cool on a wire rack and bake the second cake.
- While the second cake is baking, whip the cream. Place the whisk attachment in the Robotmix jar and add the liquid cream and sugar. Set to speed 4 for 3 minutes. Check if it's whipped enough, if not, set it for a few more seconds.
- Once the cakes are cool, cut them in half and fill them with the whipped cream. Enjoy!
