step by step recipe

  1. First, season the monkfish and coat it with flour.
  2. Next, chop the spring onion and grate the tomato.
  3. We also peel the shrimp and reserve the heads.
  4. Add the oil to the pan and set the FRIED menu, 160 ºC, 15 minutes. While it is heating, peel the garlic and cut it in half. Once hot, add the slice of bread, the almonds and the chopped garlic. When we see that they begin to brown, add the saffron threads and cook for 1 minute. Remove all the ingredients to the blender and set aside.
  5. In the same oil, add the floured monkfish and sear it on both sides. We remove.
  6. Next, add the spring onion and grated tomato. Cook for 3 minutes and stir occasionally with the ladle.
  7. Then add the wine and let it evaporate a little.
  8. When it has reduced, add the shrimp heads and cook for a few minutes until the end of the program. Press with a ladle to release juice and flavor.
  9. Place everything from the pot in the blender (except the shrimp head) and also add the fish fumet and the chorizo bell pepper. We grind.
  10. Add the monkfish, the crushed sauce, the mussels (clean), the bay leaf and salt and pepper.
  11. Place the lid and close the valve. Program the stew menu, temperature 110 ºC, 10 minutes.
  12. At the end of the program, remove the air by turning the valve. Remove the lid and introduce the body of the shrimp.
  13. Cover again and with the heat itself, they will be cooked in a few minutes.
