Ingredients

  • task_alt500 g. of peeled sweet potato
  • task_alt300 ml. of water
  • task_alt400 ml. of warm milk
  • task_alt2 onions
  • task_alt90 g. of flour
  • task_alt40 g. butter
  • task_alt100 g. of goat cheese roll (without skin)
  • task_altSalt, pepper and nutmeg
  • task_altCoating: flour, sugar-free corn flakes, and 3-4 eggs

step by step recipe

  1. First, place the sweet potato in the bowl along with the water. Cover and set the STEAM program, cooking temperature 1, for 15 minutes. If the sweet potato is large and not tender, set it for 5 more minutes. Drain, let it cool slightly to avoid burns, and cut it into small pieces. We reserve.
  2. Add the butter to the bowl and set the FRY program, cooking temperature 1, for 15 minutes. While it is heating, chop the onion. Once hot, add it and season with salt and pepper. Stir from time to time.
  3. When you see that it's softened (about 8 minutes), add the flour and stir constantly until lightly browned.
  4. Next, add the milk, crumbled cheese, salt, pepper, and nutmeg to taste. Keep stirring with the whisk until there are no lumps.
  5. At this point, add the chopped sweet potato and keep stirring constantly until it thickens and comes away from the sides.
  6. If we have time to spare, we cancel the program.
  7. Let it cool down and put the dough in a piping bag. If you don't have one, place the dough in a bowl and cover with plastic wrap to prevent the surface from drying out.
  8. Refrigerate for a minimum of 2 hours (overnight is better).
  9. Place the flour in a large dish and form rows. Cut them to the size of the croquettes using scissors.
  10. First, coat them in flour, then in beaten egg, and finally in slightly crushed corn flakes.
  11. Fry the croquettes and place them on kitchen paper to drain excess oil. Enjoy!
