- task_alt1 teaspoon of cinnamon
- task_alt½ teaspoon of ginger
- task_alt¼ teaspoon of ground cloves
- task_alt2 eggs
- task_alt350 ml of evaporated milk
step by step recipe
- Cut the pumpkin into slices about 3 cm thick, leaving the skin on.
- Pour 1.5 L of water into the Robotmix jug. Place the steam accessory on top of the jug and arrange the pumpkin slices in a single layer on the accessory. (We can use the additional tray if necessary).
- Place the steam lid in position and set the robot to 120°C for 25 minutes at speed 1. Make sure to start the cooking time when the jug has reached a temperature of at least 90°C (approx. 5-7 minutes).
- Once cooked, carefully remove the pumpkin from the accessory and pour out the water from the jug. Rinse the jug carefully and set it aside to cool.
- Once cool, place the blades in the robot jug. When the pumpkin is cool enough to handle, remove and discard the skins. Place the pumpkin flesh in the robot jug and puree by setting the robot to speed 6 for 1 minute. Set aside.
- Clean the robot jug and return the blades to the jug. Make the pie dough by adding the flour, 1/4 teaspoon of salt, and lard to the jug. Set the robot to speed 3 for 15 seconds.
- Once the lard is well incorporated (we should have a loose, floury mixture), add the tablespoons of cold water one at a time, mixing at speed 2 for 3 seconds between each addition.
- Once all the water is added, we should have a dough that easily forms a ball with a texture similar to that of an orange peel. It should not be too sticky or crumbly. If it's still crumbly, add a few more drops of water at a time until you achieve the right texture. If it's too wet, add a little more flour.
- Remove the dough from the jug and form a ball. On a well-floured surface, roll out the ball to form a circle large enough to fit in a 22 cm pie dish. Carefully place the dough in the dish and set aside.
- Preheat the oven-fryer to 220°C.
- To make the filling, clean the Robotmix jug and place the mixer in the jug. Add the eggs to the jug and beat them gently by setting the robot to speed 3 for 10 seconds.
- Add the sugar, salt, cinnamon, ginger, and ground cloves. Mix by setting the jug to speed 3 for 10 seconds. Add the pumpkin puree and mix at speed 2 for 20 seconds.
- Gradually add the evaporated milk in 4 parts, mixing at speed 1 for 10 seconds after each addition. We should have a very liquid mixture.
- Pour the mixture into the prepared pie crust and carefully place it in the preheated oven-fryer.
- Cook at 220°C for 15 minutes and then lower the temperature to 175°C for another 40-50 minutes or until a knife inserted in the center comes out clean.
- Let it rest at room temperature for at least 2 hours to set.
- Serve hot or cold with whipped cream or vanilla ice cream!
