step by step recipe
- Wash the mushrooms well, let them drain and cut them into very small pieces.
- Set the FRY Menu, 160ºC, 15 minutes. When hot, add the mushrooms. Stir occasionally with the ladle.
- While they cook, peel and chop the onion, garlic, and parsley. All very finely.
- When we see that the water released by the mushrooms has evaporated, add the onion, garlic, parsley, salt, pepper, and a drizzle of oil. Stir occasionally with the ladle. Once the program is finished, remove.
- Program the GRILL Menu, 160 ºC, 10 minutes. When hot, add the butter and when it melts, add the flour. Stir constantly until lightly browned.
- Next, add the milk, salt, pepper, and nutmeg. Keep stirring with the whisk until there are no lumps.
- At this point, add the mushrooms and keep stirring constantly until it thickens and comes away from the sides.
- If we have time to spare, we cancel the program.
- Let it cool and put the mixture in a piping bag. If you don't have one, place the mixture in a bowl and cover with plastic wrap to prevent the surface from drying out.
- Refrigerate for a minimum of 2 hours (overnight is better).
- Place the breadcrumbs in a large dish and form rows. Cut them to the size of the croquette using scissors.
- First coat them in breadcrumbs, then in beaten egg, and finally in breadcrumbs again.
- Add plenty of oil to the pot and set the FRY Menu, 180ºC, 10 minutes. When hot, fry the croquettes in several batches using the frying accessory.
- Place the croquettes on kitchen paper to drain excess oil and enjoy!
