Ingredients
- task_alt50 g. of whole oat flour
- task_alt50 g. of almond flour
- task_alt80 g. date paste
- task_alt30 ml. of water
- task_alt40 g. of grated coconut
- task_alt20 g. of mild extra virgin olive oil
- task_altToppings (80 g of chocolate, 1 tsp of coconut oil, and shredded coconut to taste)
step by step recipe
- Add all ingredients except the toppings to the blender.
- If we see that it needs a little more water, we add a bit more. The dough should be dense and thick but with the ingredients well integrated.
- Preheat the air fryer with the automatic menu.
- Place the dough between two sheets of parchment paper and roll it out until thin using a rolling pin.
- Cut them into your preferred shape. We can use a cookie cutter or a glass if we don't have one. Place them in the air fryer basket without touching each other.
- Set manually to 180 degrees, 8 minutes.
- Halfway through the cooking time, we turn them over.
- Check the last 2 minutes to see if they are browned because depending on their thickness, they will be done sooner or later. Cook them in several batches.
- Let them cool on a wire rack.
- While they cool, melt the chocolate with the coconut oil in a microwave-safe container in 20-second intervals.
- Coat the cookies with chocolate and decorate with a little shredded coconut.
- Refrigerate for a few minutes to allow the chocolate to solidify a bit and then enjoy!
Ingredients
- Store the cookies in the fridge if you want the chocolate to be more solid or at room temperature for a creamier texture.
