Ingredients
- task_alt1 can of cooked chickpeas (400 g.)
- task_alt2 cups of oat flour (180 g.), or the flour of your choice
- task_alt1 cup of dates (140 g.). You could also sweeten using 1 tbsp. of sweetener, 3 heaping tbsp. of coconut sugar (panela or regular) or 4 level tbsp. of honey. And if you see they need more sweetness to your taste, add more.
- task_alt2 tbsp. of EVOO = Extra Virgin Olive Oil (35 g.)
- task_alt1/2 tsp. of salt
- task_alt70-90% Chocolate or cacao chips (75 g.)
- task_alt1 tbsp. of apple cider vinegar. You can use wine vinegar or another type, but apple cider would have the mildest flavor. You can also use lemon or orange juice.
- task_alt1 tsp. of baking soda
- task_alt20 g. of pure cocoa
- task_alt1 tsp. vanilla flavored
- task_alt30 ml. plant-based milk
step by step recipe
- Put very hot water in a glass and soak the pitted dates for 5 minutes. Meanwhile, prepare the rest of the ingredients: rinse the canned chickpeas well, chop the chocolate, and prepare the flour. (For example, if we're going to use oat flour, we grind the oat flakes quickly with a food processor).
- In another glass, put the vinegar and baking soda to react. These two ingredients combined will make your cookies slightly cake-like. Additionally, the vinegar will help neutralize the chickpea flavor. I recommend adding this combination of ingredients, but I also tell you that if you don't have them, don't stop making these cookies, because without them, they'll still turn out delicious, although less fluffy.
- Now, put the chickpeas, flour, drained dates, cocoa, oil, milk, and salt in a food processor and blend. We can do this step in two parts if your chopper or blender isn't very powerful, making it easier to blend.
- Add the vinegar and baking soda mixture to the dough, and the chopped chocolate (reserve a part for decoration). In this step, we can mix in the food processor or with a spoon or kitchen spatula.
- Once we have all the ingredients well mixed, it's time to shape our cookies. (If you have an ice cream scoop, use it so all your chickpea and chocolate cookies have the same size.)
- Place the dough balls on parchment paper, flatten them into cookie shapes. Place some chocolate pieces on top for decoration.
- Preheat the air fryer to 180°C.
- Put the cookies on parchment paper in the air fryer basket.
- Cook at 180°C for 10-15 minutes. If you've made them thicker, they'll need about 15-20 minutes and will be more cake-like. If you make them very thin and small, they'll be ready in 8-10, and will be crispier. Halfway through cooking, flip the cookies. In any case, these cookies, due to their ingredients, will always tend to be soft.
